Suitable For: This course is suitable for employees in professional Kitchens at supervisory level. This course will develop the knowledge and skills required to cook food to a very high standard and to prepare and cook complex dishes. Candidates can specialise in either Patisseries & Confectionary or Kitchen & Larder.

Entry Requirements:

Candidates should hold Level 2 Professional Cookery.

Course Content:

Candidates must complete 47 credits.

Establish and develop positive working relationships in hospitality
Maintain the health, hygiene, safety and security of the working environment
Maintain food safety when storing, preparing and cooking food
Prepare, cook and finish complex bread and dough products
Prepare, cook and finish complex cakes, biscuits, sponges and scones
Prepare, cook and finish complex pastry products
Prepare, process and finish chocolate products
Prepare, process and finish marzipan, pastillage and sugar products
Prepare and cook complex hot desserts
Prepare and cook complex cold desserts
Produce sauces, fillings and coatings for complex desserts
Contribute to the development and introduction of recipes and menus

Additional attendance may be required for Food Hygiene and Health & Safety in the Workplace courses.

Outcome of Course and Progression:

This course is practically based to enhance candidates knowledge, understanding and practical skills in all aspects of pastry work to an advanced level, and to test underpinning knowledge of the subject.

Cost:

Year 1, tuition fee: £850.00
Year 2, tuition fee: £400.00
A commodity and materials fee of £150 is included.

Students must provide their own uniforms and knives.

16-18 year olds will not have to pay tuition fees, awarding body registration or examination fees. However they are required to pay for other third party costs, such as books, equipment and educational trips/visits

Students aged over 19 on the 31st August in the year in which they start their studies, have to pay tuition fees. In addition they are expected to pay awarding body registration and examination fees, other third party costs, such as books, equipment and educational trips/visits and the College administration fee (currently £60). Some students may be eligible for a fee concession on certain courses, although in most cases some element of the fees will have to be paid. Fee spreading arrangements are also available allowing you to spread the cost of your course. Please call to find out more about concessions and fee spreading.
Financial Support for Further Education Courses - 16-18 Bursary Fund- If you are aged 16-18 years you may be entitled to a Bursary payment to help with costs such as travel to college, trips, books and equipment.
Discretionary Support Funds - If you are aged 19 and over, a fund is available to help with costs, to include childcare, transport and equipment essentials whilst in learning, and is prioritised for those who face financial hardship.
Help with Travel costs - If you are under 19 and you or your parents/carers are on a low income and/or benefits you may be able to receive help with your travel costs.
